Ingredients: 1 lb. boneless, skinless chicken thigh meat 1 small red bell pepper 1 small green bell pepper 1 medium white onion 1 tsp. Fiesta Fajita Seasoning or Fiesta Spicy Fajita Seasoning (or more to taste) 3 tbsp. Oil Instructions: Cut chicken meat in to bite sizes. Add taco seasoning, 2 tbsp. of oil mix, and marinate at least for 2 hours or overnight even better. Once the meat is marinated, heat oil, add meat and cook at a medium-high flame. Once the chicken is cooked, add vegetables and let them cook for 2-3 minutes. Check for seasoning, if more needed, add more Taco seasoning to taste.
Ingredients: 4 Medium zucchini, cut in slices 4 Tablespoons chopped fresh basil 2 Tablespoons thinly sliced green onion 1/2 Chopped onion 1/2 Tsp. dried thyme 3/4 Tsp. garlic powder 1 Cup grated Monterey cheese 1/2 Cup coarsely grated Parmesan, plus a little more for the top if desired Salt and fresh ground black pepper to taste Cooking oil Instructions: Sautee the onion in a skillet. Add zucchini and cook until tender. Season with salt, pepper, garlic powder, thyme, add cheeses and allow to melt. Finish it with green onion, basil, and the rest of the parmesan cheese. Enjoy.
